Choose this coffee for Aloha Star’s signature fruit-forward sweetness, silky body, and clean Medium-Light finish.
This estate-grown 100% Kona coffee is pulped and then sun-dried with some of the fruit’s natural mucilage still surrounding the parchment-covered beans. That is the Honey Process: no bee honey is added. The method encourages sweetness, fruit complexity, and body while preserving a clean finish.
A Medium-Light roast keeps the coffee aromatic and expressive. The cup is smooth and naturally sweet, with layered dried-fruit character, caramel tones, and a gentle brightness that works beautifully black or in a lightly milked drink.

Experience a rare, expressive side of Kona coffee.
Grown in limited quantities on our family estate in South Kona, Hawaiʻi, this 100% Kona coffee is produced exclusively from the celebrated Gesha variety, also commonly spelled Geisha.
For this coffee, we use the Natural Process: carefully selected ripe coffee cherries are dried whole, with the fruit surrounding the coffee seed throughout drying. This method requires careful monitoring and allows the Gesha variety to express an intensely aromatic, fruit-forward character with layered sweetness.
We small-batch roast it Light-Medium to preserve its delicate floral fragrance, vibrant fruit notes, and elegant complexity.
The result is a distinctly different expression of Kona from our traditional Washed coffees—more floral, more fruit-forward, and especially rewarding as the cup cools.

For the fullest experience, taste the coffee black first and return to the cup as it cools—the floral and fruit characteristics become increasingly expressive.
Why Natural Process?
Most coffee drinkers are familiar with Washed Process coffee, where the fruit is removed before the coffee is dried.
Our Gesha takes a different path.
With the Natural Process, also called fruit-dried, the ripe coffee cherry remains whole during drying. The cherries are carefully monitored and turned until they reach the proper moisture level before the dried fruit and protective layers are removed.
This creates a very different expression in the cup.
Washed Process often emphasizes clarity, structure, and a clean flavor profile.
Natural Process can bring greater fruit intensity, aroma, sweetness, and body.
Neither method is inherently better—they reveal different expressions of the coffee variety, growing environment, and harvest.
For our limited Gesha production, we chose the Natural Process to highlight the variety's floral aromatics and expressive fruit character.
Why This Coffee Is Special
This is not simply another roast of our traditional Kona coffee.
Gesha represents only a small portion of the coffee grown on our estate, and the quantity we can produce is limited by the harvest, ripe-cherry selection, drying space and time, sorting, and final yield.
Combined with Natural processing and our Light-Medium roast, the result is one of the most distinctive coffees we produce at Aloha Star.

Process & Roast
Natural Process · Fruit-Dried
Ripe Gesha cherries are dried whole with the coffee fruit intact. The cherries are carefully monitored and turned throughout drying before the dried fruit and protective layers are removed.
This process helps create the expressive fruit, aromatics, sweetness, and body that distinguish this coffee.
Light-Medium Roast
We roast our Gesha Light-Medium—slightly lighter than our Medium-Light coffees—to preserve the variety's delicate floral fragrance and layered fruit character.
A darker roast could overwhelm some of the characteristics that make Gesha so distinctive.
Brewing Recommendations
Our first recommendation: Pour-Over
Pour-over brewing offers excellent clarity and allows the Gesha's floral aromatics and fruit layers to shine.
A good starting point is:
1:16 coffee-to-water ratio
For example:
20 g coffee + 320 g filtered water
Adjust according to your preferred strength.

Yes. Aloha Star sells estate-grown 100% Kona coffee grown and processed exclusively on our family farm in South Kona, Hawaiʻi, within the Kona Coffee District. It is not mixed with coffee from other origins.

A 100% Kona coffee contains only coffee grown in the Kona Coffee District. A Kona blend may contain a much smaller percentage of Kona coffee combined with coffee grown elsewhere. Aloha Star sells estate-grown 100% Kona coffee—not Kona blends.

Every coffee we sell is grown on our family farm in South Kona. We oversee the process from hand-picking and processing through small-batch roasting and farm-direct shipping.

These terms describe how the coffee fruit is handled after the cherries are picked, and each method can influence the coffee’s sweetness, body, and flavor.
Washed Process: The fruit is removed from the coffee bean before drying. This method often produces a clean, balanced cup with clear acidity and a classic Kona coffee character.
Honey Process: The outer skin is removed, but some of the fruit’s sticky natural layer, called mucilage, remains on the bean while it dries. This can develop more natural sweetness, a silky body, and greater fruit complexity.
Natural Process: The whole coffee cherry is dried with the bean still inside the fruit. This longer contact with the fruit can create a fuller body and more pronounced fruit-forward flavors.
All three methods begin with ripe, carefully selected coffee cherries, but they create different expressions of the same farm and origin.
